First attempt at salsa 11 months ago was burnt and bitter and left me heartbroken. This attempt was just about perfect. The wife loved it as well. Recipe in comments. It’s missing something, I just don’t know what it is. But I’m not too upset about it. Thanks for all the advice and tips everyone gives here!

    -2 green bell peppers

    -2 Serranos

    -1 jalapeño

    -1 red onion

    -7 cloves of roasted garlic

    -15oz can fire roasted tomatoes

    -about 23oz (out of 28oz can) of crushed tomatoes

    -a couple handfuls of cilantro (leaves and stems)

    -salt to taste

    -1/4 cup of water

    Sliced, quartered, and removed seeds of all peppers except serranos (just cut stem off those. Peeled and quartered the onion. Wrapped garlic bulb in foil with salt, pepper, and avocado oil and roasted for about 20 minutes. Placed all peppers and onion in oven and broiled for about 20 minutes (low broil for first 10, high broil for next 10). Pulled peppers and onion out, threw in blender, squeezed out garlic cloves, and added water, salt, cilantro, and tomatoes. Blended until smooth. Voila!
