Preparation

  1. Preheat the oven to 300 degrees.
  2. Line a cookie sheet with baking parchment.
  3. In a medium-size bowl, beat the egg whites until they form stiff peaks. Gently fold in the almonds, sugar, almond extract and spices, if using, until blended.
  4. Drop the dough by teaspoonfuls onto the prepared cookie sheet. Bake for 15 to 20 minutes, or until lightly golden. Let cool and remove from parchment.
