Ingredients

  • 2 cups bulk breakfast sausage
  • 2 medium onions, chopped
  • 1 or 2 ribs celery, chopped
  • Poultry seasoning, to taste
  • Salt and black pepper, to taste
  • 3 to 4 cups cubed day-old white bread
  • ½ cup chopped parsley
  • Melted chicken fat or chicken stock

    About 5 cups, or enough for 2 chickens

    Preparation

    1. Brown the sausage in a deep skillet, breaking it up but leaving coarse chunks.
    2. Add the onion and celery and saute briefly.
    3. Add the poultry seasoning, salt and pepper. Turn off the heat, add the bread cubes and parsley and toss the mixture thoroughly. Moisten with fat or stock, if desired. Adjust the seasonings and stuff and truss the chicken.
