Tomato and Caper Sauce


  • 2 tablespoons butter
  • ¼ pint chicken stock
  • 1 pound tomatoes, peeled, seeded and chopped (or canned)
  • 1 teaspoon tomato paste
  • 3 tablespoons capers
  • Coarse salt and freshly ground pepper to taste

  1. Melt the butter in a saucepan. Stew the tomatoes, uncovered, with the chicken stock and tomato paste until thickened. Season. Stir in the capers. Correct seasoning and serve hot with the cabbage and onion tart.
