Preparation

  1. Preheat the oven to 300 degrees. Season the shad inside and out with the pepper. Wrap the fish in bacon until completely covered. Place the shad in a baking pan and add the wine, lemon juice and potatoes. Cover with foil. Bake for 8 to 10 hours, basting every 2 hours. Serve with the potatoes and pan juices.
