Moroccan Chickpea Protein Bowl is perfect for your healthy eating goals. Filled with plant-based protein, clean ingredients are perfect for a meatless Monday, and easily made vegan.

Ingredients

1 can/1.5 cups chickpeas
1 can tomato paste
1/2 yellow onion
2 cloves garlic
1/2 cup spinach leaves
1 cup wheat bulgur or quinoa
1.5 cups Greek yogurt
Dill
Basil
2 eggs, poached

1. Sauté garlic and onions with avocado oil until it smells delightful.
2. Combine Greek yogurt, 1 clove of garlic, 1 cup of water, basil, and dill into a bowl and mix.
3. Add tomato paste to sauté and add mix together.
4. Add chickpeas with water to sauté until well-mixed and even. Cook on medium for 12-15 minutes.
5. Cook the bulgur or rice with salted water.
6. Add spinach when your chickpeas are starting to become softened but not squishy, after about 15 minutes.
7. Combine with salad or avocado in a bowl and drizzle with your tzatziki yogurt sauce.

this Moroccan chickpea protein bowl is one of my favorite meals to have for a meal plan I’ll start by Browning onions and garlic and then I’ll make my own little suziki sauce with the recipe below I’ll add Harissa spice tomato paste my chickpeas all to the hot pan and let that cook down for about 20 minutes we’ll peel our avocado then we’re going to add spinach inside for a little bit of green poach two eggs throw them on top with some pepper I’m using organic bogar which is just a healthier version of rice but you can use white rice or brown brown rice or even quinoa with this recipe it’s awesome because it’s easy to heat up it’s easy to make and it only takes about 25 minutes I’ll throw it in my FIT strong and healthy glass containers and have it for tomorrow
