Simmer 1 cup of broth with 1t liquid smoke, remove from heat and add 1c TVP

Dice one bell pepper and half an onion, sauté until softened, add 4 cloves minced garlic, TVP mixture and taco seasoning to taste

Warm a can of fat free refried beans and a can of red enchilada sauce

Cook 1 box fiber gourmet Spanish pilaf per package directions

To assemble: use 1 low carb tortilla (la banderita 45 cal was what I used), add 2T each of rice, beans, and shredded lettuce. Wrap up and top with 2T sauce and 1T Mexican shredded cheese
