Just posting an update to the pancakes I made a few days ago. I added a mashed banana (98g) as advised as well as increased the almond milk to 90ml. But this made the mixture runny and also quick to burn, in addition to thin. I ended up adding an additional 10g of the pancake mix and lowering the heat a little more, to make the batter thick.

Overall, it is more moist but I did like the structure of the first batch of pancakes so now I’m going to work towards achieving a middle ground between the two batters.
