Ingredients

  • 2 large shallots
  • 1 large clove garlic
  • Remaining jalapeno from salsa recipe
  • Juice of 1 lime
  • 2 tablespoons honey
  • 1 teaspoon olive oil
  • 10 ounces salmon fillet (without skin)

    Preparation

    1. Mince shallots, garlic and from half to all of the remaining jalapeno. Combine in a small bowl with the lime juice and the honey.
    2. Heat a small saute pan until very hot, and add the oil; reduce heat to medium-high, and saute salmon on one side for about 1 minute. Turn salmon, and add shallot mixture. Reduce heat to medium, and cook until done, following the Canadian rule: measure the salmon at the thickest part and cook 8 minutes to the inch. The salmon should be done in about 5 minutes.
