[Music] how are you going to make your Roto green uh I’m going to make a p PE [Music] puring we’ve seen three already markers have a go at your skills test Monica this is yours what are you going to get the chefs to do I’m going to get our chefs to make us a vibrant green PE risotto how long are you going to give them to to make this risotto 20 minutes a risotto in 20 minutes that’s all you need wow okay let’s see you do it first thing we need to do is to get the rice on I’m going to use a little bit of onion I want the white onion because you know you don’t want to see any color through this rice so onion softened with a bit of oil then the rice coat the oil around the rice then a glug of white wine so that gets the flavor in there as well yeah that’s right look at me yeah look at you can you help me I’ve only got 20 minutes so as that wine reduces I start to add some stock to it it’s add reduce add reduce add reduce and the intensity of the flavors just start to grow and grow and grow I like just a touch of bite and not so creamy but Monica you got cream on your board that’s not for your risotto is it no no no no no no sorry sorry Marcus and I’m just using it to to cook the frozen peas which have been thed out to make a puree and then folding it through the risotto ah you’re not going to make a vibrant green risotto unless you puree those frozen peas you’re just not going to get it [Music] that’s a beautiful green beautiful beautiful green all I’ve got here is some fresh peas which I’m going to fold through at the end of my risotto as well it’s really important uh that the chefs while they’re doing the other jobs that they keep coming back they stir this and they taste it and now this is what I want to see I want to see this risoto change color look at that look at that so just some Parmesan and I’m doing the parmesan off the heat this is just going to to melt into it and really bring this risotto together okay and I’m ready to [Music] Plate I love that love that love that I’m just finishing it with some fresh uh peas shoots and there we have it my vibrant Green P rotto wonderful I’m pretty sure they can make a p Roto can they make a PE colored ratoo should we get the chefs in let’s do it first to face Monica’s test is Yorkshire Bourn Curtis Who currently Works in a Mediterranean restaurant in London my sty food is mixed modern European food I like doing lots of French cuisine but I like to do twists on food I’ve done a few competitions I’ve done young Yorkshire chef of the year and I was the winner of that and I think that will make me stand out from the [Music] competition I would like you to make us a vibrant Green P rotto yeah how do you feel about that I feel positive about it excellent 20 minutes off you go all right go go go [Music] how are you going to make your Roto green uh I’m going to make a PE PE [Music] puring you’ve had 7 minutes what food do you love I love French cooking French is probably the best Marcus hates French food really no I was going to say Kus was it always your plan to become a chef uh yeah cooking with my grandma she inspired me does your grandmother know that you’re a chef because of her uh no she doesn’t actually she does now [Music] yeah you got 30 seconds you ready to play yes [Music] and then I’ll finish off with PE shoots all done yeah well done 2 seconds to [Music] go your rotto is is is pretty green you knew you needed the puree to get the color through the risotto I like that [Music] you know what that’s not half bad you know a couple of minutes more and the race would have been perfect what I loved about the way you worked was just that attention to that pan didn’t end from the start to finish lovely sweet flavor of pea and lots of butter through it good seasoning and of course plenty of Parmesan cheese I like the way you worked definitely can taste peace through this I see some potential in your curs you’re 21 years old you know this is the toughest part is to walk in here and face us for the first 20 minutes relax off you go he’s good he’s all right he’s good he’ll be all [Music] right I’m feeling a bit better fight so I’ve been done with to get good feedback from then was happy imp positive to me
