welcome to my new series make it like a Mediterranean where I am making recipes for you that my Italian and Spanish mom would make for me and of course I’m starting this series off with the ultimate bowl of Italian comfort food pastina which always feels like a big warm hug from my mom get started by bringing 1 L of chicken stock to the boil you’re going to need one cup of pastina which means small bits of pasta and I always use the star-shaped ones add to the chicken stock with a big cuup of butter and cook until the pastina is plump and Al Dente now my mom would always sneak an egg in for extra nutrition and us kids had no idea it was in there because she would temper it with the soup you do this by slowly adding the cooked pastina to the whs eggs so it does not curdle once your pastina is cooked seasoned with salt and pepper add a little more butter and then the egg slowly stir through off the heat and then grade in lots of Parmesan this is how we made our pastina in my family and it’s absolutely delicious

  2. Pastina in brodo was / still is a staple in my Italian family. We prepare it with chicken stock and acini di pepe pastina, with a bit of boiled carrot & celery for flavor. The broth is an equal partner in the comfort of this dish! Freshly grated parmigiano a must, too! ❤️

    potatoes are always better… Greek and Spanish food – better than Italian…

  4. I made something very similar with oatmeal for years. I recently had to stop though because several different brands of oats were suddenly much sweeter than they used to be and made the recipe unpleasant. I think I will give this a try! I might even be able to get my five year old to try it!

  5. Oh my gosh my mom used to make this with feta cheese! (We are bulgarian hence the feta) I had no idea thats what those small star pastas were, now i can actually find them and buy some!

  7. My late nonna use to make this. My cousins and I loved it. I make it for my own children. Especially if there feeling unwell. They also love it.

  8. As an Italian American with an Italian mom this is the ultimate comfort food that we had growing up and I made for my kids from the time they were babies. Now my kids are adults and they still have pastene when they don't feel good. 😊

  9. When I was a kid, my father would add suarkraut, and I hated it. And by adding suarkraut, I mean it was almost entirely suarkraut. Sometimes, you got Kielbasa with it. And others, you woke up to it for breakfast.
