It’s cauliflower rice.

Big bowl of congee for 300 calories (not including chilli oil). Honestly I couldn’t tell there was cauliflower rice in there at all! I guess because it broke down once it was cooked, and congee is a pretty gloopy dish anyway. I think there was enough actual rice in there to trick my brain into extrapolating that it was all real rice 😂

Ingredients for 1 serve (I made 3 serves at once in the rice cooker)
40g jasmine rice
100g cauliflower rice
50g frozen peas, carrots and corn mix
15mL soy sauce
5g brown sugar replacement
5g oyster sauce
10g minced garlic
10g minced ginger
20g chopped spring onions
Spices (white pepper, chilli powder, 5 spice)
30g baby spinach
115g frozen prawns
Extra spring onions to garnish

I chucked everything except baby spinach and prawns in the rice cooker and topped with an unknown amount of water (it was just up to the top of the ingredients) and stirred to combine.
I placed the prawns in a layer on the top.
When the rice cooker finished, I chucked the baby spinach in and closed the lid quickly so the heat could wilt it a bit.
Mixed through spinach once it was softened.
Served topped with spring onions.
