1 pound of risotto
Six large shrimps
Salt and pepper to taste
Half a cup of white wine
12 ounces of lot of artichoke hearts
Romano and pecorino cheese
Olive oil
One lemon
Two shallots and of course, the most important ingredient love 
all right guys here we go it’s just me and M again two of us he’s at a decent time tonight and there’s nobody else here so it’s date night at home my favorite kind of date so tonight we’re going to make what Roto with uto chokes how’s that Roto with AOK so to make risoto with okes we’re going to need risoto arboro we like scoty all right okes hearts a lemon two shallots oiva shout out to Bono parano and Romano mixed malin’s famous stock vegetable stock six large shrimps salt and pepper to taste and a little V biano so I’m going to start chopping everything up and we’ll be back guys date night just two of us so he’s doing the cutting he’s my sush no are you my Sue Chef I love it I do whatever is got to get Thunder listen I don’t know how to make r when we eat Roto M makes it right I never make the Roto so we got the auto parts from um Trader Joe’s they were like frozen ones but I’m just cutting them like really small see just so they’re bite size no nothing too complicated all right I love water chokes yeah they’re delicious especially with the OT what a great combination and actually the first time mine made this no we did it together but I just was making auto choke res she says oh part some lemon I was like you no that’s not a bad idea and that’s how the lemon went in there so we’ll be back we’ll be by the stove by the stove all right so we’re going to dice up our shallots here nice and nice don’t uh throw my scraps out I got my bag from the freezer I keep all the vegetable scraps in a Ziploc bag in the freezer this bag’s full I’m ready to make stock again then she makes Liquid Gold from that tell it come delicious all right there’s nothing like it we’re going to keep our shallots and then we’ll be back by the store for real this time uhuh all right baby boy baby boy we’re going to start off a little bit of olive oil all right here’s the beerel baby boy hold hi biscotti and M swears by these pants here our place our place we like all the pants so far that we got so we’re going to sweat these on a little bit and we’ll be back guys all right what are you doing baby doll I want some fresh sliced tomatoes cuz these tomatoes look so good at Trad Joe’s look at them beautiful and I’m putting simple uh salt and pepper to taste and a little fresh oregano and olive oil and and I’m going to have a little dip of bread with this I I don’t care that’s what I want you want to dip the bread I do and I’m I’m going to see I’m cutting them nice and thin look very nice baby doll you know I’m dangerous very nice very nice very very nice I’ll show you how it looks when it’s done I just want to show everybody how this rice come look at this he’s Auto scoty so they tell you what the servings are so I’m doing it for about four or five people I cut it there let the rice out and I won’t have any extra rice I probably will though four or five people which two you know if somebody’s going to show up probably and eat this see the later tomorrow morning you’ll see all right so it’s very nice very good job Scotty I like that all right so we got the nice color in the shalot over here so first thing I’m going to do is I’m going to toast my deser I’m going to put it all right here in the middle I’m just going to let it toast before I put anything else any wine any uh stock I’m just going to let this go and just let the just let the rice toast a little bit just for like maybe like 2 3 minutes all right so that’s when we’ll be back we’ll back in 2 3 minutes right baby doll we will be okay so it’s been about about 3 minutes all right so now I’m going to put oh wait a minute a little bit of you know just just to let it go for a little bit not too much all right nice now this is all going to get absorbed so basically the rice right now it’s just going to be like a SP fude and it’s going to absorb all this and you’re going to see how it’s going to grow so I’m going to let this go for like 2 minutes and I’m then I’m going to add my stock and a little salt and pepper to taste all right so I can smell the wine evaporating beautiful see how the rice is already getting a little getting a little like suck sucking up the juice that’s all sucking up the juice now I’m going to add my start adding my stock so when you add your stock it’s always got to be room temperature not cold cuz you don’t want to stop any of the cooking so here we go I’m going to do enough to cover it and then I’m going to add it as I need it look at the rice and just let it go just let it go once in a while you got to come in stir let it get to heat and look at that it’s going to wait till you see how the rice just sucks up all that goodness we’re going to add a little salt and pepper to taste I don’t like too much salt so I just add a little bit little pepper and we just let it go it’s going to let it simmer away I got medium to high heat it’s like six so it’s not really high it’s medium heat all right just slightly higher all right we’ll be back in a few minutes and see how our rice is doing all right so we start evaporating see that like that huh so now well not evaporating I Ed the wrong word some of it is evaporating but it’s getting sucked up by the rice you could see how the rice is changing look at that look how the rice is changing it’s getting softer and it’s getting larger and sucking up all that juice all that flavor all that flavor is going right into those rice M can’t wait to eat all right so I’m going to keep doing it until the rice is like 3/4 of the away cooked and then we’re going to put the rest of our stuff in it our shrimp and our other chokes all right so it’s been about 24 minutes all right I added the two 2 and 1/4 cups of uh nice broth in here OMG it smells good hry up I tasted it it’s about it’s about 3/4 of the way done a little more than 3/4 of the way done so I’m going to add my AR is we’re going to put a lot of a chokes you don’t have to put this much if you want of them he said I don’t need all these UT chokes that go I want them in there right yeah so these AO chokes are blanched already so we’re just basically going to heat them through all right and now we’re going to add our gambini our that looks good M yummy yummy risoto smells delicious it smells delicious and the good thing about risoto is you could do this with carrots if you want to uh you can add any vegetable leaks uh you could do any anything you want yeah leaks is good in the result is very good and now you’re going to put some cheese right heck yeah yummy yummy yummy we’re going to add some cheese now just a little bit no a lot give me a kiss I love him couple of handfuls oh bis Scotti’s getting jealous cuz you kissed me this is going to get nice and nice and creamy I wash my hands and then your lemon I’ll leave here right you’re not putting that in yet I’m going to put the lemon last soon as I see the color of the shrimp change a little bit we’re going to go and let me tell you something you know what it is too with the cheese and the starch from the alboro rice and all that it makes a nice little cream look at that it’s coming nice and creamy let me show you R delici see how the rice is nice and creamy look at that look at that HH nice cream all right so I’m going to finish this up let me cook through and then Sim I got see we’ll be back all right so I forgot the one item here the lon yummy yummy and the lemon’s going to give a nice little flavor I’m always cleaning I me cooking or cleaning right yep we’re going to give you a chicken biscotti all right I’m making my hubby’s dish [Music] yeah so simple and delicious sometimes the simplest ingredients right make it taste good here biscotti it does and you can omit you can eliminate you can substitute but you guys get the drift more or less of how we do our Roto and it’s very good so we’re going to enjoy our dinner cuz there’s nobody else here but me and her so we love you guys thank you for watching as they say chinin salute salute
