Preparation

  1. To bake, place the pumpkin in a roasting pan and pour water in the pan to make a depth of 1/4 inch. Cover with foil and bake until soft, about 45 minutes to 1 hour. To steam, place pumpkin in a steamer and steam until soft, checking the water level to make sure it doesn’t evaporate, about 1 hour.
  2. When cool enough to handle, scrape the flesh from the skin and place in a food processor. Puree until smooth. Use immediately or store in airtight containers in the refrigerator or freezer.
