    If anyone is from Napa Valley/ the Bay Area in California then you’ve probably heard of the model bakery. They are by far my favorite English muffins in the world. They cook them in basically a vat of clarified butter and are just caked with better when you pick them up. I’ve been trying to dip this English muffin ever since.

    I usually follow a recipe from a dup I found online (posted below). For this one I didn’t do a biga, instead used 220 grams of sourdough starter, and omitted any commercial yeast. Rise took a lot longer, like 6-7 hours. Everything else from the recipe is pretty much the same.

    They look great! I’ve been meaning to make these but never have. I usually make crackers with my discard. What recipe did you use?
