  2. Best thing I that Jamie Oliver says Egg fried rice is unhealthy because of the vegetable oil in it (and I agree they're not good) but he used olive oil 🤦‍♂️ which not only has flavor but smokes easily when frying, if it did, it's very poisonous since it becomes trans fats haiya.
    He should have used avocado oil instead, neutral but healthier

  4. I think this video from Jamie was around the time when EVERYONE was using olive oil for EVERYTHING because it's "So healthy!" around the same time that Rachel Ray coined EVOO as an acronym and term.

  6. MSG actually is very common in Indian cooking, because a major chunk of indians are vegetarians and we kind of lack the natural sources of MSG to be added to the dishes so we end up adding it, mostly in indo chinese recipes.

  9. From a purest perspective the criticisms of Jamie are valid. I think these videos are part of Jamie’s mission to get people to eat better and as a result he simplifies recipes and adds other things to widen the appeal to the no sophisticated person who is trying to make the kids something healthy and don’t know how to cook and don’t have time.

  10. Here is how I would differentiate between fried rice being a side or a main: The location of the meat and other vegetables. (Maybe to some extent, tofu)
    If the meat and vegetables is cut up (save for say, shrimp) and mixed in with the fried rice, it is the main dish.
    If the meat is kept whole and placed on the top or the middle, then the fried rice is a side.

  11. Adding water to the rice is yikes for asian cooking. If you watch any reaction videos by East Asians to this part, they all react with horror

  13. well for asians rice is staple. hence egg fried rice can replace any rice dish and will be our main dish. while for others they can replace it with any egg dish and it will be their side dish.

  14. also shallots is as onions and normally we add it first but spring onion stems are not same as shallots. they are for garnish. not first thing into the pan.

  15. A woke is definitely not something a lot of people that I know have, I personally have one because my dad lived in the Philippines for years. However I would say that not a lot of people have chilli jam. Unless they made this recipe.😅

  17. Chef James, I go camping quite a lot here in the US, and I have to disagree with you about using packet rice. When I go camping, I use par boiled brown rice (it's a bit more forgiving than par boiled white rice). When camping, I make most individual meals in foil packets (less cleanup, which gives me more time to enjoy camping). Instead of adding water to the foil packet to cook the rice, I add a handful of ice. This not only adds liquid to cook the rice, it also steams the veg, and brings the protein (all proteins have been fully cooked and added basic seasoning to, and frozen the day before making the trip) to a proper temp. Basically, I'm eating better than anyone else in the campground… without packet rice! 😉👍
