Ingredients

  • Pizza dough made with four cups of flour (see recipe)
  • ½ pound goat cheese
  • ¼ pound mozzarella cheese, cut into small cubes
  • ¼ cup ricotta cheese
  • ½ cup prosciutto cut into small cubes, about 2 ounces
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon chopped rosemary
  • 4 leaves fresh basil, chopped, about 1 tablespoon, or 1/2 teaspoon dried
  • 2 tablespoons finely chopped parsley
  • Freshly ground pepper
  • 2 eggs, lightly beaten
  • 1 tablespoon water

Four servings

Preparation

  1. Prepare the pizza dough and divide it into four portions. Shape into balls. Keep covered with a cloth.
  2. Preheat oven to 400 degrees.
  3. Combine the goat cheese, mozzarella, ricotta, prosciutto, Parmesan, rosemary, basil, parsley, pepper and one egg in a mixing bowl. Blend well.
  4. Roll out each ball of dough on a lightly floured surface into a circle about 8 1/2 to 9 inches in diameter.
  5. Spoon an equal portion of the filling onto one-half of each circle, leaving a margin for sealing. Beat the remaining egg with the water. Rub a small amount of the egg mixture around the margin. Fold over the unfilled half and press around the margin with the fingers or a fork to seal.
  6. As the calzoni are filled and sealed, arrange them on a baking sheet. Cut a one-inch slit in the top of each to allow steam to escape. Brush the calzoni all over with the egg mixture.
  7. Place in the oven and bake 30 minutes.
