For Halloween this year, we went all out Texas style and threw a good ol’ pig roast! Got ourselves a fine suckling pig, seasoned it up just right with a smoky rub and a hint of spice, and set it up on the spit roast. We kept that fire low and slow, spinning it over the coals ‘til the meat was fall-off-the-bone tender and the skin crisped up to a golden crackle.
