Preparation

  1. Heat a large, heavy skillet over high heat and add the peanut oil. When very hot, add the peanuts and cook, shaking the pan, until they are lightly browned, about 4 minutes. (Lower the heat if they begin to scorch.) Immediately transfer the peanuts to paper towels to drain. Sprinkle with salt and serve warm or at room temperature as a condiment.
