1/2 tsp salt
1/2 tsp sugar
1 tsp white pepper
1 tsp chicken bouillon powder
2 tsp cornstarch
3 tsp sesame oil
3 tsp olive oil (or pork lard for an authentic taste)
For the Wrapper:
450g wheat starch
100g potato starch (or cornstarch)
1 tsp salt
Boiling hot water (about 250-300ml, but adjust as needed)
Pork lard (optional, but recommended for a smooth dough)
Instructions:
1. Prepare the Filling:
Start by chopping the prawns into small pieces. You can mince half of them and leave the other half in slightly larger pieces for texture.
In a large bowl, combine the prawns with the pork mince. Add salt, sugar, white pepper, chicken bouillon powder, and cornstarch. Mix well.
Drizzle sesame oil and olive oil (or pork lard) into the mixture, and mix again until everything is fully combined. Set the filling aside.
2. Make the Wrapper Dough:
In a large bowl, combine wheat starch, potato starch, and salt.
Slowly pour in boiling water, a little at a time, mixing as you go. Gradually add the water until the dough starts to come together.
The dough should be soft and elastic but not sticky. If it’s too dry, add more hot water; if it’s too wet, add a little more starch. Knead the dough for about 10-15 minutes until it’s smooth and pliable.
Once the dough is ready, wrap it in plastic wrap and let it rest for 15 minutes. This will make it easier to work with.
3. Shape the Dumpling Wrappers:
After resting, cut the dough into smaller pieces, about the size of a golf ball.
Roll each piece into a ball and flatten it with your palms or a rolling pin to form a small circle (about 3 inches in diameter). If you don’t have a rolling pin, you can also use a knife to carefully flatten it into a round shape.
Keep the dough pieces covered with a damp cloth or plastic wrap to prevent them from drying out as you work.
4. Assemble the Dumplings:
Place a spoonful of the prawn filling in the center of each wrapper.
Carefully fold the wrapper over the filling and pinch the edges together to seal, creating a half-moon shape. You can pleat the edges for a more traditional look, but it’s not essential.
Ensure the dumplings are tightly sealed to prevent them from opening while steaming.
5. Steam the Dumplings:
Line your steamer with parchment paper or lightly oil the steamer tray to prevent the dumplings from sticking.
Place the dumplings in the steamer, making sure they don’t touch each other.
Steam the dumplings over high heat for about 7 minutes. After 7 minutes, turn off the heat and let them rest in the steamer for an additional 5 minutes to cool down slightly.
