Low and slow at 225 until 115 internal with pecan wood, about 1 1/4 hours, massive sear for about 1 1/2 minutes each side (4 sides), tent for 10 minutes. Turned out perfect.

    You made a calculated move pulling that at 115 internal and then searing it for 90 seconds. Not only did you get a nice sear, but you probably brought the internal up to 125-130 by the time you took it off. Great job and great pictures!
