-12.5 lbs Costco pre seasoned
-Washed off all rub and cured with kosher salt for 1 hr
-washed off salt and covered with 40% Celtic salt, 40% fresh ground black pepper and a remaining 20% of oregano, thyme, rosemary
-smoked for ~3.5 hrs at 250 basting with worxheztire and black pepper mix, baste every hour
-start 15 min rest in butcher paper
-1.5 hr rest in cooler
-serve
