The last picture is the brisket wrapped in foil with beef tallow. I seal it all up before putting it in the oven.

    Looks great. Just wondering: it seems you are doing the no-wrap approach? What is the internal temp target you are aiming for? What is the smoker temp you used for the 16 hours? Thanks!
