
Best Chicken I've made (so far…) Brined with lemon, dill and salt 12 hours. Cooked for low to give it a nice smokey flavour before crisping it high. It was so moist as I cut it, they were squelching!
However, skin got soggy pretty quick after letting them rest (was alot of juices dripped off that they kinda sat in) Any advice on how to keep the skin crisp?

Hard to crisp the skin on the wsm, but if you remove the water pan and really crank the heat in the last 30 minutes, it helps. I’ve also just pulled from the smoker a bit early and tossed it over some coals for direct heat for a bit. You can also use baking powder on the skin before adding spices. It helps get a crispy skin.
If you are going to violate a chicken…spatchcock it. 🙂 You won’t regret it.

I was never impressed with beer can chicken, but brining poultry makes a huge difference.
For crisp skin, dry brining is what’s up. Before you cook, slather your bird in salt (and herbs too if you want), rub salt between the skin and the meat, and leave it on a rack in the fridge for at least 24 hrs, uncovered. You’ll have beautifully crispy skin this way and well seasoned meat.
Rest on a wire cooling rack. It’ll still soften up a bit tho

Word of caution, there is a plastic lining in beer cans. I finally switched to a “made for beer can chicken” stainless steel tray and cup. Been using them for a long time, work well. Similar item:

Beer can chicken is a myth. The beer has no effect on the meat. It doesn’t keep it moist. It doesn’t flavor or season it. It literally does nothing but contaminate your food with burnt plastic fumes.
Want your chicken moist? Don’t overcook it.
Want your chicken to take good? Season it.
Want your chicken to give you alzheimers? Put a plastic lined can of liquid in its ass while you cook it.
Ah yeah taste that melted plastic inner lining of the can.
