One cut-up, partly cooked chicken for couscous

Preparation

  1. Preheat oven to 425 degrees.
  2. Sprinkle the chicken with salt and pepper, and place it on a shallow roasting pan, breast side up. Place in the oven and bake about 25 minutes or until golden brown on top. This chicken is not fully cooked, but will be further cooked with the lamb and vegetables.
  3. When ready to add this partly cooked chicken to the meat and vegetables, cut it into serving pieces.
