Center of the grill is hottest so keep the thin parts towards the outer edge.

Yes. Depending on the direction of heat and airflow, how the meat is positioned in conjuction with those variables will vary how the meat gets cooked. Example: on the smoker/grill pictured, the heat is coming from the bottom even with the displacer plate, so the bottom will cook faster.
