**Eggplant Fatteh*
4 cups of cedar Valley pita chips
2 egg plants, cut up into 1 inch chunks
1 teaspoon olive oil
1 onion, minced
1/2 lb ground beef or lamb
1 teaspoon 7 spice blend
1/2 teaspoon each Salt and pepper
2 teaspoons Aleppo peppers
2 cloves garlic minced
Yogurt Sauce:
1 1/2 cups Yogurt
1/4 cup tahini
1 garlic, minced
Juice of 1 lemon
Garish:
Parsley
Toasted Pine nuts
Pomegranate arils
Sumac
Toss the eggplant in some of the spice blend and olive oil.
Air fry them for 16-18 minutes at 375 degrees F.
In the meantime, cook the beef. Start by cooking the onion, add the meat, spices and garlic. Mix until cooked through.
Make the yogurt sauce: Mix all the ingredients together.
Layer the Fatteh: Spread a layer of cedar valley pita chips.
Top that with the cooked meat and eggplant.
Cover the dish with the yogurt sauce, and then garnish.
Serve right away, and enjoy!
