INGREDIENTS:
2 cup dried red chili peppers
4 pieces garlic
2 tsp ginger
1 tbsp cane sugar
1/4 cup shaoxing wine (or rice vinegar)
2 tsp salt
DIRECTIONS:
1. Tear the tops off of the dried peppers and discard the seeds. Leave a couple of pepper with seeds to increase the spicy level
2. Rehydrate the dried pepper in water overnight or cook in boiling water for 5-8mins in a covered saucepan. The soaking water can be discarded
3. Peel and crush the garlic. Peel and roughly chop the ginger
4. Add all of the ingredients into a blender or food processor. Blitz on high for a few seconds
5. Transfer the paste into a glass container. Put the lid on, and let it sit in room temperature overnight. Then, transfer it to the fridge and let it cool overnight

Except for the vinegar this looks like Malaysian sambal. I grind mine with oil and it keeps in the fridge for up to a month.

The chili paste reminds me of the sauce for Hainanese chicken rice. Will you be able to create a vegan dish inspired by the Hainanese chicken rice? I think the star of the dish is not the chicken, but the sauce. A tofu bowl with the dressing using the chili paste? Just an ideaโฆ.
