Every now and again I see some nicely marbled chuck short ribs. I reverse sear them just like a steak. They are amazing. Anybody else do this cause it’s half the price of ribeye and juicy delicious.

    Oh lord, that is a great idea. Was just posting about country style ribs (pork) and now I want to make this.

    Oh man, I absolutely love doing this! Chuck short ribs are like the hidden gem of the beef world. I usually get them at my local butcher, and the marbling is just *perfect*. Reverse searing them works wonders and they end up so tender and flavorful.
