I fuck with the tomato steak. Personally I’d do more cheese and less mayo but I’m not mad at it. I’d put a ton of fresh ground pepper on it too.

Tomatoes as the meat of a sandwich is rarely a mistake in my experience. They are so refreshing and delicious and totally amplified with the right combination of condiments and extras.
One of my all-time favorites is a more simple approach of good sourdough, lightly toasted, mayo, thin slices of cheddar, honking slices of juicy tomatoes, and heavily salted and peppered. Nothing better some days!

Trust me when I say the hot take on the tomato sandwich is to skip the cheese, skip the gigantic hunks of bell pepper or genetically ultra-thick jalapeños, and simply go heavy on the black pepper, light on the salt, a nice shmear of mayo, and extra heavy on the granulated garlic. Lightly toasting, or not toasting the bread is optional.
If your granulated garlic is reasonably fresh and not that lost shaker from the back of the spice cabinet that’s followed you through two relationship breakups and three residence changes, you’ll be surprised at just how yummy a simple tomato sandwich can be, especially when you’re using in season heirloom tomatoes, or tomatoes fresh from the garden.
To the Tomato-haters who are going to no doubt flame most of the comments in this stream, because for some reason they just cannot stop themselves, just eat your dinosaur chicken nuggets and let the adults continue talking, LOL.

Just wanted to help inform ppl in case they aren’t aware–tomatoes are the most common source of umami in Western (specifically US) dishes similar to how soy sauce, anchovies, kombu, etc. is often used to add umami to East Asian dishes. So I don’t think it’s a coincidence that the OP decided to use tomatoes as the main filling in this sandwich since they make perfect sense as a meatless/pescatarian alternative to classic sandwiches.
However, tomatoes will wildly vary in terms of taste based on how they’re grown–commercial beefsteak tomatoes found in most US supermarkets are known for tasting very bland since they were genetically modified over decades to be *big* and red rather than sweet. I’ve always preferred buying roma tomatoes over beefsteak since they’re tastier and still big enough to use in recipes like sandwiches (slice and stack em). If you can afford them ofc, heirloom tomatoes will likely taste the best.
