Black Bean Burgers

Packed with plant protein! Quinoa, black beans, raw sunflower seeds, and raw pumpkin seeds are all excellent sources of protein and various minerals. Quinoa is one of a few grains which contains all the essential amino acids making the tiny grain a complete protein! Enjoy these gems any time of day! Great snack for the road or add to any meal to fill you up!

Serves 6
Ingredients:
2 cups of cooked Black beans or 1 can of black beans drained and rinsed.
1 cup of cooked quinoa
2 carrots, peeled & chopped
1/4 of an onion chopped
3 garlic cloves
1/4 cup raw sunflower seeds
1/4 cup raw pumpkin seeds
oregano to taste
2 scallions, sliced
1 teaspoon Moroccan Tagine (or curry powder)
1/2 teaspoon sea salt
1/4 teaspoon garlic powder
olive oil
balsamic vinegar
nutritional yeast
lettuce leaves

If using dry black beans, follow the package directions for cooking.
If using canned beans, drain and rinse well.
1 cup of cooked quinoa. Rinse well before cooking, then follow package directions.
Clean, chop, roughly slice the vegetables and herbs.
Place the black beans, vegetables, herbs and spices in the food processor. Pulse to make a rough paste.
Add the scallions and the paste to a bowl. Fold in the quinoa, olive oil, balsamic vinegar, and nutritional yeast.
Heat a large non-stick pan to medium-high heat. Drizzle a bit of olive oil.
Take 1/3 off a cup of bean burger and form into a patty.
Add the bean burger to the pan. Heat through and flip when golden.
Arrange a bed of lettuce on a plate, drizzle a little olive oil and sprinkle a little salt.
Once the bean burger is heated through, plate the patty on the bed of lettuce.
Serve 2 bean burgers on a bed of lettuce. Enjoy!
