Preparation

  1. In a cocktail shaker, combine sugar with 2 tablespoons hot tap water and shake until sugar dissolves. Add tamarind and lemon; shake well. Pour into ice-filled highball glasses. Top with club soda and add two dashes of bitters to each glass.
  2. Hold each orange strip under a match or lighter for 10 seconds until it just begins to color. Twist strips and drop one into each drink; serve.
