Preparation

  1. Heat the oil in a large saucepan or small kettle, and add the onion and garlic. Cook, stirring, until the mixture is wilted.
  2. Add the tomatoes, tomato paste, water, salt and pepper to taste, and stir. Add the basil, parsley, bay leaf and thyme. Bring to the boil and let simmer 30 minutes.
