I do use rotisserie chicken for my chicken salad – and I use it shamelessly.

For me it depends on the quality of the tiss. Some are just too greasy, even all breast.
I will definitely use the bones to make stock, to eventually poach some breasts in, to make chicken salad.
So yes, I’m a way I do make chicken salad with a store bought tiss.

Especially in the summer, I hate turning my range on for strictly longer than necessary so summer is a lot of rotisserie chicken, grilled meats, and deli meats.

Can’t go wrong with that. Chicken salad or enchiladas will always be the best use IMO.
Main thing I add is fresh dill but I absolutely love dill.

We get 2 chickens, pull wings/thighs for dinner the first night. Pull the rest of the meat after for chicken salad, tossing all the juice, bones, hard bits, ligaments etc into the instapot with some celery, onion, carrot, and peppercorns to make stock. We freeze the stock (usually in quart freezer bags laying flat to stack in the freezer). We use the stock during the week either to make rice, or the kids put it in their electric hot-pots to eat with frozen sliced meat.

One of my local grocery stores makes chicken salad from rotisserie chicken and has it in the deli case. It’s pretty good and I get it regularly.

Yes, I am one person. I can knocked out a couple nice little meals with one and there is still a tone left over and it doesn’t really keep well so chicken salad is a good option

My favorite method is a whole smoked chicken from our smoker, deboned and dice up the meat. Mix with mayo, fine diced red onion and celery, add cayenne, garlic, pepper and salt. Simple but to die for. Love it on wheat with garden tomato and lettuce.

Absolutely. Get the Costco rotisserie for $5, leave it on the counter for about an hour so that it doesn’t burn my hands off, then (keeping it in the bag it comes in) just massage the chicken right off the bone. The meat literally just falls off. Boom- I’ve got a full rotisserie chicken ready to eat in no time. I use it for everything, including chicken salad.
