Made a pork butt yesterday for the 4th. On Weber for 8 hours, rested for 2 hours. Made a Carolina vinegar sauce. Tasted even better today.
Slaw is green and red cabbage sliced on mandoline. Dressed with dukes mayo, white vinegar, sugar, salt, garlic powder, grated onion, grated carrots, msg, black pepper, and dijon mustard. Let rest overnight.
Bun recipe is from Brian Lagerstrom on YT. “This Burger Bun Took Me 10 Years to Figure Out” – Calls for dough conditioner but 100% worth. I’ve made so many different bun recipes these past few years and this one is my favorite for burgers, fried chicken, pulled pork, etc. Super squishy and tasty.
