Mediterranean Vegetable Soup

Serves 4-6

Ingredients
1 Large Onion (Diced)
2 Large Carrots (Diced)
1 Red Chilli (Chopped)
1 Red Bell Pepper (Diced)
1 Tsp Cumin
1 Tsp Turmeric
1 Tsp Smoked Paprika
1 Tsp Mixed Herbs
1 Tsp Salt
1 Tsp Pepper
1 Tbsp Tomato Puree
1 Tbsp Garlic (Minced)
400g Chopped Tomatoes
400g Potatoes (Diced)
200g Broccoli (Chopped)
1 Litre Vegetable Stock (2 Cubes)
390g tin Green Lentils
100g Spinach (Chopped)
10g Fresh Parsley (Chopped)

Wholesome, hearty, and bursting with flavour this mediterranean vegetable soup guarantees to fuel your day. Loaded with veggies, herbs and spices for a bowl of mediterranean goodness.

Method
Begin by frying diced onion and carrot with oil on a medium high heat for a couple of minutes.

Then add red chilli and red pepper, frying for a minute or two.

Add cumin, turmeric, smoked paprika, mixed herbs, salt and pepper, mixing through.

Add tomato puree and garlic, stirring through.

Then add chopped tomatoes, mix and add diced potatoes.

Continue to stir, then add broccoli.

Add vegetable stock then cover on a medium low heat for around 20 minutes or until the veggies have softened.
(If using dried lentils then add them before.)

Add lentils and simmer for 5-10 minutes.

Then, use a stick blender to get the desired consistency. I went half and half.

Add chopped spinach and stir through before finally adding chopped parsley.
