IMO, depends who you are cooking for. If have guests coming or you just have a large family, Prime. But if I knew I were just going to smoke it some random weekend, just for me and my gf, where 90% will be leftovers (chili, tacos, nachos, etc) Choice all day.

I inspect the briskets I buy and get the best looking one. If your doing a massive cook and bulk briskets then nevermind, just grab 8 and roll. You can make choice taste great. Generally with what I cook with. If it’s all going into chopped brisket sandwiches then select and choice are best.

How many are you buying? I prefer choice, because prime briskets tend to be heavier. But I would recommend looking at the selection before making a choice. When I need trim and tallow, I go for the ones that will give me a bit of that.

Sam’s Choice brisket looks better than their prime in my area. The prime have really thin flats. Not sure I would buy these online, go and physically pick out individual briskets.

Definitely choose them yourself, however, prime is almost always better than choice (supposed to be always). I avoid buying meats from large grocers as their quality is usually subpar and usually overpriced. My local butcher (mosida market) just sold me prime brisket at 4.25/lb.

Never online brother. The delivery driver will pick the lightest one and make sure to suplex it on delivery. Although might be more tender.

In general, the fattier one will be more forgiving when cooking. Cooking for larger groups to me is more stressful in terms of time constraints and not wanting to mess up. For that reason I’d pay a little extra for prime in case I may need to cook slightly hotter or faster.

Here’s the thing about meat – All meat grading is done from the 13th rib. If that’s Prime, then the whole cow is prime. If it’s Choice, the whole cow is choice.
There is A LOT of cow between the 13th rib and the brisket. Some ‘choice’ briskets have beautiful marbling.. and some ‘prime’ briskets will be thin and lean.. There is absolutely no way to know what you’re getting unless you’re there picking out the meat.
If you’re just ordering for delivery and have no control over what specific briskets you get,. I would go with the prime.. it’s a bit more likely to be a good cut of meat and most likely no lower than choice vs picking a choice and ending up with something closer to select.
If you’re there, spend the time to look at all the choice cuts because you’re very likely to find one that is as good as prime for a big discount.

Honestly, it could be either one.It all depends on how it looks and feels in my hand i’m not buying any brisket online. Risky to get one with a super flat flat. That’s not gonna smoke well, you just kind of must see them feel them. Touch ’em, look at them.

I got a prime from Sam’s and it came out incredibly well. I’d highly recommend biting the bullet, spending the extra 20 and just get a prime brisket. Your friends and family will thank you

I would not ever bother with choice brisket. If I couldn’t find or afford Prime I just cook something else

Prime is more forgiving since it *supposed* to have more fat. But like many have said, NEVER buy expensive meat online. Go look at it in person, feel it. You’d be surprised what you find in the pile. I’ve found choice stuff with more marbling than prime
