My Italian friends call this Italian penicellin pastina soup. Don’t trust me. Trust Nuna. Onion, carrots, and celery. This is known secret parmesan rice. Chicken broth. Get this party boiling. Turn it to low. Simmer for another 20 minutes or so. This is the secret that gives pastina that beautiful orangey hue. Go in with the pastina, that tiny pasta. This takes only 3 minutes. This is a bowl of goodness. I can totally see why they call this Italian penicella. So good.
