  1. Roasted tomato soup with grilled cheese will forever be a comfort meal for me! This is the perfect way to use up the last of your tomatoes for the season! This is how I make mine, I hope you try it!!

    ROASTED TOMATO SOUP & Grilled Cheese
    ✨2 lbs Roma or plum tomatoes, halved
    ✨1 red bell pepper, quartered
    ✨2 carrots, peeled and chopped
    ✨1 yellow onion, halved
    ✨1 garlic head
    ✨1 shallot halved
    ✨2 tbsp olive oil
    ✨Salt & black pepper
    ✨4 cups chicken broth
    ✨1 tsp smoked paprika
    ✨1 tsp thyme (fresh or dried)
    ✨1 rosemary sprig
    ✨1 teaspoon sherry vinegar
    ✨1 bay leaf
    ✨Parmesan rind for simmering
    ✨1/4 cup heavy cream

    1.Preheat oven to 425°F. Place all veggies on sheet pan or baking dish. Toss with olive oil, salt, and pepper. Add Thyme and rosemary. Roast for 45 min.
    2. Remove rosemary. Transfer veggies to a pot add broth, Squeeze garlic from skins add smoked paprika, and sherry vinegar blend until smooth. Then add bay leaf, and Parmesan rind and Simmer 15–20 min.
    3. Remove bay leaf, and rind. This is the part where you taste for seasoning and salt to your preference, you can also add better than bouillon instead of salt!. Serve and drizzle with heavy cream and olive oil!

    *You can also add the heavy cream into the soup directly for a richer soup.

    For the grilled cheese I used croissant bread. A blend of 3 cheeses: aged white cheddar, mozzarella and caramelized onion cheddar from TJ. I spread apple pie jam on one side and aioli mustard on the other side.
