Cucumber salad, or pipino salad in Filipino cuisine, is a simple yet flavorful side dish made with fresh cucumbers, onions, and a tangy-sweet vinegar dressing. Light and refreshing, it’s often served alongside grilled or fried dishes to balance out rich or savory flavors. This easy-to-make salad is a staple in many Filipino households, especially during hot days when something cool and zesty is all you need. With its crisp texture and bright taste, pipino salad is a perfect way to enjoy the natural freshness of cucumbers in a distinctly Filipino way.

Ingredients:
2 pieces cucumber
2 pieces onion
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon sugar
1/3 cup apple cider vinegar
(or white vinegar)
1/4 cup water

Directions
Slice the cucumbers into slightly thin circles. You can also remove the tip and bottom. Place into a bowl and set aside.
Slice the onion into thin strips. Separate the layers slightly. Place into a bowl and set aside.
For the sauce: In another bowl, add in apple cider vinegar, salt, pepper, sugar, and water. Give it a good mix.
In a bigger bowl, place in cucumbers, onions, and the sauce. Toss everything until the onions and cucumbers are well ‘coated’ with the sauce. Refrigerate for 2 hours.
Give it another mix before serving.
