Welcome back to Chickpea Friday, where I share some fresh inspiration for that can of chickpeas in your pantry. Today we’re using those crispy roasted chickpeas to top one of my favorite seasonal soups. The soup is basically pumpkin and roasted red peppers blended together. It’s simple, but it’s actually so good. And then we’re topping it with these smoky maple roasted chickpeas. They’re like little protein croutons that take this soup to the next level. Ngl replacing poultry, and meat in general, with chickpeas has to be one of my best decisions so far 🤭 EDIT: Obviously I eat from a variety of protein sources. I do not eat just chickpeas. 😂
