Easy Eats Pineapple Soda Marinated Chicken Thighs

Ingredients:
1 lb chicken thighs,sliced into 1/4-inch strips
2 cups pineapple soda
1/2 cup soy sauce
1/2 cup rice wine vinegar
3 tbsp brown sugar
2 tbsp fish sauce
2 tsp kosher salt
6 garlic cloves,smashed

Easy Eats Method:

1. Combine all marinade ingredients in a sealable bag. Add chicken, seal, and refrigerate 4-6 hours.

2. Thread marinated chicken onto skewers. Grill over medium heat (350°F) for 15-17 minutes, turning frequently, until nicely charred and cooked through.

This marinade gets some sweetness and some citrus notes from a secret ingredient. I’ll show you here in a second. One of my ideal dinners is just some grilled chicken skewer, some tortillas, a side dish, and some great sauces. And this marinade literally goes with just about anything. The marinade starts with some fish sauce, some brown sugar, soy sauce, rice wine vinegar, a little kosher salt, and some fresh garlic. My secret ingredient for this marinade is some pineapple soda. Not only does it add citrus notes and some sweetness, it caramelizes really, really well on the grill. I’m using chicken thighs today and I sliced them up about 1/4 in thick. Place in the marinade for a minimum of 2 hours, but go as long as you can. Throw those onto the hot side of the grill for about 10 or 15 minutes. Uh, you can do these in the air fryer as well.
