Quickly becoming my favorite salsa. It’s got quite a kick to it, but the nuts and tomatillos help keep the heat in check.
Ingredients
– 20-30 Chiles de Arbol – 1/4 White Onion (Diced) – 5-6 Garlic Cloves – 15-25 Raw Peanuts – 4 Tomatillos – Salt – Water – Canola Oil
Instructions
– Gently boil the tomatillos for 3-4 minutes each side. Set aside and reserve a bit of the water. – Heat oil in pan to medium/low heat, then toast arbol chilis and peanuts for 3-4 minutes. – Remove chilies and peanuts, then add onion and garlic. Saute 5 minutes until golden. – Remove from heat, and let cool slightly. – Add Oil, Onion, Garlic, Chilis, Peanuts, and reserved tomatillo water to blender and blend on high until smooth. – Add tomatillos and 1tsp salt, then pulse until you reach desired consistency. – Remove from blender and add more salt if needed.

I use sesame seeds instead of peanuts….might have to try this !
