I bought this because it looks like a veal breast we smoked a while back and wanted to repeat. Imagine my surprise when I actually read the package! Anyway, I dusted it with SPOG and put it on to smoke for an hour on the smoke setting of our Lil Tex then upped it to 250*F. At the 4th hour, when I checked the temp (170*F, BTW), came surprise #2: it was actually two racks! I separated them and after another two hours (6 in all) they’d hit 197*F. They were fabulous! Not dry at all, incredibly tender. Highly recommend.
