Today we prepare one of the most iconic Turkish street foods — Iskender Kebab — outdoors in the middle of our peaceful village garden. This legendary dish from Bursa is known for its thin beef slices, rich tomato–butter sauce, crispy bread cubes, and creamy yogurt on the side.
We cook everything from scratch using fresh local beef, homemade marinade, open-fire grilling, and authentic village techniques. Enjoy the calm atmosphere, the sound of fire, and the true taste of traditional Turkish cuisine cooked in nature!

👨‍🍳 FULL AUTHENTIC ISKENDER KEBAB RECIPE

Ingredients – Beef & Marinade:
1 kg thinly sliced beef
4 tbsp olive oil
1 tbsp yogurt
1 tbsp tomato paste
1 tbsp lemon juice
3 crushed garlic cloves
1 tsp black pepper
1 tsp red pepper flakes
1 tsp smoked paprika
1 tsp cumin
1 tsp salt

Ingredients – Tomato–Butter Sauce:
3 tbsp butter
2 tbsp vegetable oil
2 tbsp tomato paste
400 ml hot water or beef broth
1 tsp sugar
1 tsp salt

Bread Base:
Turkish pide or flatbread (cubed)
3–4 tbsp melted butter

For Serving:
Thick yogurt
Grilled peppers
Fresh tomatoes
Extra melted butter

How to Prepare:
Marinate the Beef: Mix olive oil, yogurt, tomato paste, garlic, lemon juice, and spices. Add beef, coat well, and rest for 2 hours or overnight.
Make the Sauce: Melt butter, add oil, add tomato paste, then water/broth. Season with sugar and salt. Simmer for 10 minutes.
Grill the Beef Outdoors: Cook on high heat until lightly crispy but still soft.
Prepare Bread Base: Toast bread cubes and coat with melted butter.
Assemble: Add bread base, top with beef, pour tomato–butter sauce, finish with melted butter, and serve with yogurt and grilled vegetables.
