This homemade lamb doner kebab tray bake hits harder than you local takeaway – juicy, tender and full of proper flavour. It’s my British-Asian style doner, easy to prep and perfect for anyone who loves a good kebab.
If you want doner that actually tastes better than takeout, give this a go. It’s seriously addictive!! No machine needed – just mix, roll, bake, slice & enjoy.
INGREDIENTS
700g mince lamb (20% Fat)
300g mince beef
1 Onion – grated (squeeze out juice)
2 tbsp garlic paste + ½ tsp ginger paste
2 tbsp plain yogurt
1 tbsp melted ghee
2 tsp Cumin powder
1 tsp Garam masala
2 tsp Coriander powder
1 tsp Paprika
1tsp Smoked Paprika
1 tsp Black pepper
1 tsp Red Chilli powder
1½ tsp garlic powder
1½ tsp onion powder
Salt to taste ( I added 4 tsp)
½ tbsp Lemon juice
MIX WELL
Spread the mixture evenly over baking/parchment paper and roll tightly into a firm log
Bake at 200°C for 25-30 mins
Cut into small pieces
Then GRILL/BROIL (High Heat) for 3-6 mins (NOTE: watch it constantly – it can burn FAST)
Brush cooked doner with melted butter
Salad Mix:
finely shredded white cabbage
grated carrot
thinly sliced red onion
tomato, thin sliced
cucumber, cut into thin strips
This is my homemade sweet + tangy hot sauce – or you can use your favourite hot sauce if you prefer.
🔥 Ingredients:
1 cup sweet chilli sauce → 240g / 240ml
2 tbsp ketchup → 30g
1/3 cup mixed achar pickle (pasted) → 60g
(I used Ashoka Mixed Pickle, available in Morrisons / Asda. Any mixed pickle works) – Blend the achar (mixed pickle) until smooth so the sauce drizzles properly.
Use regular pitta bread or flatbread
Warm it so it’s flexible
Spread a layer of mayo at the bottom (I dilute the mayo with a splash of milk to make it runnier easier to drizzle and gives that proper takeaway finish)
Add your salad mix
Load with your sliced lamb doner
Drizzle the hot sauce + extra mayo on top

This looks disgusting on so many levels I hardly know where to begin. All the Ghee and Butter is gross. Just drowned in horrible, greasy, saturated fat juices. Instead of being crispy and dry as it should. I would take a blow torch and crisp it up and then leave all that butter for someone else who wants to die of heart disease. But the biggest crime of all was that horrific looking sweet sauce to pour over and destroy a perfectly good kebab, Well it was far from a perfectly good kebab, but pouring that horrendous looking sweet sauce over anything should be a 5yr prisonable offence. Topped off with a few extra years for the standard mayo. A kebab should have a homemade, hot chilli sauce on it. Garlic mayo perhaps. For me personally a mint yoghurt sauce to cut through the heat of a proper chilli sauce. The starting idea of rolling the mince out in baking paper and cooking like that isn't bad. But everything after that is an offence to the taste buds. I would go back to the drawing board with this!! Yuck 🤮🤮🤮
I wanted to add this so I've edited: I know this is super critical and I apologise for any offence. I'm all for people trying out things and for people spreading ideas on YT. I love YT and I love cooking and watching cooking vids. And I don't normally give critical reviews. I have a personal dislike for the taste and even smell of butter, so I really didn't like that. And as I've eaten authentic street food of all cuisines I know what's good and what isn't. I think you could do a better job with the sauces. But hey, whatever works. We all have different tastes. But I'll check out some of your other vids and see what I can find that I like. Don't take my criticism personally as it's just 1 person. Keep going and getting better and good luck with the channel!!

you do know donner only has 3 ingredients and the restaurant that does that has won 4 years in a row for the best Donner and its a national award judged by professionals keep it simple is best too much crap going on in this recipe i know you just care about views but this shows you dont care about cooking just views
After removing papers, just Fry the pieces in their juices in a pan, best part was the juice, they become perfectly textured

I use a blow torch at the end to get the crispy fat effect rather than butter under the grill. It saves time. But I love your video and new ideas are always fun! 😁 saved to my Recipes playlist ♥️ xx

Garam Masala in a Doner Kebab. Never thought I'd see it. But here we are. Not to mention an unbelievable amount of butter you put in it. SWEET And TANGY sauce???? What was that. We Indians have a very poor habit of indianizing everything. Just make the real deal and enjoy for what it is.

You ideally want to keep all those juices in the meat, if you mix some instant mashed potato into the mix, the juices will rehydrate the potato and keep the meat super juicy. Believe me, it works really well.
