Welcome back to the Raw Dog Nation, where we’re peeling back the protection of temperature and handling our meat as God intended. Spoiling nice beef. Give it to us raw and when it comes to steak tata, I like to keep it fairly simple, but with a little hack to get that beefy umami you miss out on without cooking it. And that’s to fold a beef stock pot through along with some salted garlic, shallots, chives, and parsley with a couple of egg yolks to hold the whole thing together. And I’m an absolute fiend for some smoky salts and add even more of that on top to get an absolutely popping tarta. Well, that’s not the only raw dogging we’re going to go for today, cuz I’m also going to try and use a tortilla press to make steak carpacio, but realizing I need to bash and roll it flat separately anyway. And my thinking is I can use that as my wrapper to make some raw beef spring rolls wrapped up carefully to hold it all together until I made a whole bunch. Probably needed something for the crunch, but unfortunately I was in the middle of a forest 10 milesi from a shop, but still tasted banging. M, that is so good.

As someone who uses those stock pots very often, yeh you used WAY too much… that’s gonna be way too salty and strong and concentrated. Perfect amount probably would’ve been literally about quater of what you used or even less! They’re very strong.
Cooking while camping is the most fun type of cookery, partly because being in the woods is grand, partly because overturning the idea that camping foods are limited and/or freeze dried is fun, and largely because campfire smoke adds fantastic layers.
Raw preparations are great for camping, so long as the ice is good they take less work without the cooking; plus, people are super impressed by "fancy" food at a campground. I love taking oysters camping, because honestly all they take is shucking and maybe a diced shallot in some good vinegar (caution, throwing shells in the firepit has been found to attract coyotes).
You just opened my mind to the idea that camping is the perfect place for raw beef. Searing the outside adds flavor, and saves waste since what would be trim gets cooked, that's better than making it in a kitchen. I have learned today, so, thank you good sir
