  • ¼ cup olive oil
  • 1 cup finely chopped scallions, green part and all
  • ¾ cup finely chopped parsley
  • Salt to taste if desired
  • Freshly ground pepper to taste

Preparation

  1. Preheat the oven to 400 degrees.
  2. Split the bread lengthwise in half, but do not cut through, leaving it hinged on one side.
  3. Heat the oil in a saucepan, and add the scallions, parsley, salt and pepper.
  4. Cook, stirring, until scallions are wilted. Spoon the filling onto half of the bread. Cover with the second side, sandwich fashion.
  5. Wrap the bread closely in foil, and bake about 10 minutes.
