At first I thought it was chicken and wondering why the butter was so essential. But on fish…. yeah, the butter is a nice splurge

Looks amazing! The beauty of the Med diet is there are no real “cheat” days. There is no food off limits ( no real food anyway, ultra processed edible substances are off limits). You wouldn’t do this often but it’s fine occasionally to enjoy an incredible dish like this. That’s what makes this so sustainable.

Looks good!
bread: i use the vermont sourdough with whole wheat recipe from jeffrey hamelman’s Bread book which isn’t available online but it looks to be the same as [this](https://www.kingarthurbaking.com/recipes/vermont-sourdough-recipe) with wheat instead of rye.
fish: [this](https://chuckycruz.substack.com/p/pan-fried-flounder-with-dashi-beurre?utm_campaign=posts-open-in-app&triedRedirect=true) with cod in lieu of flounder and salmon roe garnish in lieu of sliced fruit
salad: [this](https://www.rhubarbandlavender.com/recipes/baked-goat-cheese-with-honey-caramelized-onions/) crumbled onto lettuce with balsamic vinaigrette
