Ingredients
- 1 dozen mini candy bars
- 1 ¼ cup flour, more for dredging
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- 1 cup seltzer
- Vegetable oil, for frying

Preparation
- Freeze the candy bars for 30 minutes.
- Whisk together flour, baking powder and salt in a large bowl. Whisk in seltzer. Heat 4 inches of oil to 375 degrees in a deep fryer or saucepan.
- Dredge candy bars in flour, then coat evenly with batter. Working in batches, fry until golden and puffed all over, turning if needed, about 2 to 3 minutes. Drain on paper towels.
- Variations: Use for fish fillets, peeled and sliced sweet potatoes or asparagus.
